Winemaking : The grapes are selected manually on long sorting tables, and each individual grape is then inspected by an optical sorter. The grapes are left to macerate for several hours before being gently pressed and separated from the skins. Fermentation takes place very slowly in oak barrels for about a month and a half.
Refinement : The wine matures on its fine lees for 12 months in French oak tonneaux. It then ages in bottle for a further 6 months.
