Clay and limestone soils, hand harvested, wild yeast spontaneous fermentation in stainless steel, second fermentation in bottle, with 10 months in the bottle on fine lees, unfined, unfiltered, no added SO2. Wildflowers, melon, mandarin orange, bit of fried sage, good acidity backed by green tea tannins and consistent fizz. Citrus, saline minerality infuse the nutty finish. Well balanced, spry.
