It comes from Barbera grapes grown in Barbaresco, in the wide valley of the Three Stars, on poor soils, rich in mineral salts and densely layered. In the vineyard the maximum environmental inspection is in force through. After the harvest took place the first week of October, the pomace remains in contact with the must for 3 weeks, kept in immersion by means of comebacks throughout the period of alcoholic fermentation. Then the malolactic fermentation takes place in the cellar at a temperature of 20 *C in traditional Slavonian oak barrels of 10-20 hl for 20 months. Filtration and clarification are not provided. Intense ruby red with garnet reflections. Complex aroma of fruit in spirit (cherry, plum, black cherry), slightly spicy (cinnamon, cloves) with a bitter chocolate finish. Good tannic balance. Intense, warm, persistent and of particular elegance and depth.
