The Outrevin shows its true greatness on the palate. The entry is rich, almost festive, with a remarkable presence that fills the entire mouth. The finely polished tannins – unusual for a Chasselas, but characteristic of amphora vinification – run gently along the edge of the tongue, while the precise, finely chiselled acidity gives the wine structure and vibrancy. The oily texture, a result of the completed malo-lactic fermentation, carries on the aromatic kaleidoscope of the nose, adding subtle notes of vanilla, milk chocolate and liquorice that linger in a long, mineral finish. The mastery of the Barthelmés is evident here: the balance between richness and precision, between tradition and careful innovation.
pairing : The textural richness and aromatic complexity of Outrevin predestine it for a variety of dishes. It is particularly harmonious with Alsatian tarte flambée with bacon and onions, whose smoky notes complement the fruity flavours of the wine. Also to Goat cheese with honey or Grilled sea bass with fennel,
it unfolds its full potential. For a more unconventional pairing, I recommend Asian dishes with ginger and lemongrasswhose spicy freshness emphasises the exotic notes of the wine.
